    I'm back to redeem myself from the deep fried grilled cheese. This time with some fusion cuisine. This is my take on chicken and waffles; I call it "Not Your Uncle's Chicken and Waffles." It consists of fried chicken paired with a french toast soufflé served with a maple bacon custard. Not sure how many calories but it was scrumptious!

A Gift Made in Kind

My one woman boycott of Christmas died November 5, 2010 after a 17 year struggle with the paganism commercialization of the holiday.  If you know me you know I boycott just about everything just for the sake of no risking being indoctrinated.  Most of the boycotts are without merit and I have forgotten why I boycotted them in the first place.  But my boycott of Christmas I remember clearly.  You see I dug deep into my soul to MAKE a gift for the man I was dating at the time.  I spent weeks on a poem and a drawing.  When it was done I framed it in a 16 x 20 picture frame.  I presented it to him and he was not pleased.  His thought, better yet he verbalized, “I just knew you were going to get me something Polo.”  I was devastated as his rant continued on about him sacrificing to save up for my gift, a $90 stuffed animal by Gund.  I flew out the day after and bought a hat and sweater and Fedexed it for the next day.

I spent the last 11 years preaching to my girls that we will not celebrate Christmas in the traditional sense.  No tree no exchanging gifts. Instead do for others.  Every year they have given gifts to someone less fortunate than they were.  For Christmas of 2009 we decided to give to a little girl in our building.  We would always see her dressed with clothing too small, shoes to big, and spring dresses in the winter with knee high socks.  So we went out and bought her a new coat, tights galore, boots, pants, turtlenecks, gloves, hat scarf, and placed it at her door.  I never saw her smile so big.  But apparently I offended her father.  The child’s mother wanted my girls’ sizes so she could get them a few things.  Even though I insisted it was not necessary she insisted that her husband insisted it was.

And here we are 2010.  I sat my girls down and asked them if they wanted to have a tree this year and exchange gifts.  Gracie in all her infinite wisdom said, “It’s not about retrieving it’s about giving.”  [Yes she said retrieving.]  Rose sat quietly as I explained to Gracie I wasn’t interested in the answer that sounded right.  I then told her if she felt it was truly not about receiving then don’t feel bad if nothing is under the tree for her. Her reply, “Ok, ok let’s exchange gifts.”  Within minutes Rose had compiled a short and sweet wish list, while Gracie’s was altered weekly.

The gifts are beginning to pile under the tree as the girls ooo and ah about who has a box with their name on it.  There are stockings with all of our names on them and they are filling up nicely.  The man in my life asks for nothing but good, hot, food and a little less nagging.  Yet the best part of this holiday is that the gifts that my children are giving are all handcrafted, made from within.

Naan Pizza with Tomatoes and Basil





Have you seen the commercial where the shopper is standing in front of the frozen pizza looking for the best pizza?  So many labels to read to figure out which one has real cheese, the least processed etc. etc.  I say build your own pizza in no time!

INGREDIENTS
CRUST
TOPPINGS
Naan Bread
Pasta Sauce
Mozzarella
 Tomatoes
Fresh Basil
Olives
Oregano
Garlic
Salt

DIRECTIONS
Preheat your oven to 400°

Start with a tasty brick oven baked Naan.  This one is seasoned with garlic
  
 Spread pasta sauce


 Add some oregano


Add Mozzarella Cheese.  Shred your own mozzarella.  The mozzarella in the bags contains potato starch

 
 Add fresh tomatoes
 
 Add Fresh Basil


 Add Olives (optional)


Place in oven at 400°for 15 minutes
For crisper crust place directly on oven racks

 
 Voila!



Red Velvet Cake with Cream Cheese Frosting



I like to affectionately call this one "Product Placement Red Velvet Cake." As you scroll through the pics you will see what I mean. First and foremost let me introduce you to Enrique, my Kitchen Aid. He was a very special birthday present this year. The kitchen aid fairy (aka sweetcheeks) left him in the middle of the floor when I came home from school. We have been in love ever since. You see what that says on the side... The Cake Recipe is courtesy of Paula Dean and the Food Network site, yet the icing is all mine. When it comes to southern desserts I look to her and the Neelys. Before beginning this recipe please remember we must do our Mise en Place first! Mise en Place – Everything in its place.

Yield: 16 to 20 servings
Cook: 25 min

Ingredients
Cake:
2 cups sugar
1/2 pound (2 sticks) butter, at room temperature
2 eggs
2 tablespoons cocoa powder
2 ounces red food coloring
2 1/2 cups cake flour
1 teaspoon salt
1 cup buttermilk
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1 tablespoon vinegar

Cream Cheese Frosting:
1 (8-ounce) package cream cheese
1 stick butter, softened
1 (1-pound) box confectioners' sugar

Directions

Preheat oven to 350 degrees F.

In a mixing bowl, cream the sugar and butter, beat until light and fluffy.

Add the eggs one at a time and mix well after each addition.

Mix cocoa and food coloring together and then add to sugar mixture; mix well.

Sift together flour and salt. Add flour mixture to the creamed mixture alternately with buttermilk.


Blend in vanilla.

In a small bowl, combine baking soda and vinegar and add to mixture.

Pour batter into 3 (8-inch) round greased and floured pans.
Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.
Remove from heat and cool completely before frosting

Icing:
Blend cream cheese and butter together in a mixing bowl. Add sugar and blend. Spread between layers and on top and sides of cooled cake
